Come on!! All mums enjoy attention on Mother's day, my mum included. She has inspired and impacted me everyday of my life by bringing me up in loving home with optimism, faith and cheerfulness. In Chinese, pistachio is called “Happy Fruit”, therefore I have created this nutty smiley pistachio lemon cake as a token of appreciation for all mothers. It’s a special occasion for us to treat as a chance to show mum our big thanks for all her hard work!
